    that pork chop looks delish! :D… last week, i got 2 HUGE pork chops (thick!) center cut too… for $2 total!… enuff for me and my son… hubby doesnt like pork chops these days… he wanted homemade soup…

    have you made that shoestring tuna meal from the crockpot recipes from the hillbilly housewife? … i saw that and i was wondering how good it was (if you knew) … i have so many cans of tuna and coming up with new recipes to try is kinda hard … just curious ๐Ÿ˜€

      Rose, I haven’t seen that recipe yet but if you like tuna here’s a recipe you might like. It takes about 5 mins. to make. It’s creamed tuna on toast. It really is good. I just make a white sauce by pouring 3-4 cups of milk (just depends on how far I have to stretch it) add about 4 tbsp. of flour to the cold milk, whisk, cook until thickened (this takes as long as it takes my toast to cook) dump in a small can of drained tuna. Just pour it over the toast. I love it.

      Also if you are needing something different for your canned hams you can take them and grate them up, add some grated pickle or relish, mayo and you have a great sandwich spread that really goes along way. I do this with spam all the time and no one even knows they are eating spam and always wants my recipe. ๐Ÿ™‚ ๐Ÿ™‚

        Jill, what a wonderful idea to use Spam for ham salad. I love ham salad but don’t always want to get a big ham. I have my great aunt’s old cast iron grinder that works great for this (I had to swipe it from my Mom’s kitchen before my brother when she passed). I make an awesome meat spred from leftover roast beef.

          Yes Pat I have one of those old meat grinders and that is what I use quite often because I love grinding all kinds of leftover meat. I even like taking just good old bologna and grating it with some American cheese – add mayo for sandwiches. You would think it would taste the same as just slapping them on a piece of bread to eat but for some reason the first time I ate that it I had no clue it was bologna. So good. Grinding meat like this is really great for stretching meat if you need to and for using leftovers in a different way like you said.

            I should try that. I love old fashioned deviled ham but it never occurred to me to use Spam. Duh.

            Peg Bracken had a recipe for Wolfe eggs, which I love. Fry two slices of white bread in butter. At the same time, fry two eggs over easy. Spread the bread with pate (or in my case, deviled ham), slide an egg on top, add parmesan and broil for a minute or two. Super easy and super delicious.

    A bit of veggies can be creamed the same way, and served over toast. I add butter to my cream sauce, and this time of year, we use some of the fresh asparagus that is coming up. This is good if you only have a few vegetables or a bit of leftovers. You can also add cheese to your cream sauce. This makes a very hearty breakfast, and is cheaper than bacon and eggs.

      Everyone use to cream veggies all the time but then the “eating healthy and cream sauces” faze came into being and stopped doing it. I love fixing creamed “things”. I made creamed potatoes the other night with cheese and my favorite is to add tuna or chopped hard boiled egg to a cream sauce served on toast for a quick and easy meal. You can add almost any kind of left over meat or veggies to a cream sauce. For those of you who have Dining on a Dime check it out for the white sauce recipe if you need it.
