June 26, 2026 by 12 Comments

Green chile is a tasty light meal when eaten with tortillas, but can also be used to top a lot of different Mexican-themed dishes! Try this easy homemade green chile recipe and you’ll have an easy meal for your family!

This easy green chile recipe makes a light tasty meal when eaten with tortillas, but can also be used to top a lot of different Mexican themed dishes! It's super delicious!

I absolutely love green chile! Being from Colorado, it’s pretty common to find green chile at Mexican restaurants. It can be eaten as a soup or it can be used to pour over the top of smothered burritos, enchiladas and more.

I like to serve my green chile wrapped in tortillas. Then I smother the tortillas with more green chile and then top with cheese, lettuce, tomatoes and sour cream.

If you like, you can make up the green chile and pour it over your favorite Mexican dishes like burritos or enchiladas. You can also pour it over chicken or pork chops.

Indian Fry Bread Recipe And Navajo Tacos!

June 2, 2026 by 54 Comments

This easy Indian Fry Bread Recipe makes a delicious fry bread that can be used to make Navajo Tacos, also called Indian Tacos and a variety of other foods. We like to make the Indian tacos, but sometimes the kids just like to eat the Navajo fry bread with honey. Either way, they are delicious!

This easy Indian Fry Bread Recipe makes a delicious fry bread that can be used to make Navajo Tacos, also called Indian Tacos. We like to make the tacos, but sometimes the kids just like to eat the fry bread with honey. Either way they are delicious!

This easy Indian fry bread recipe makes a wonderfully delicious Navajo fry bread, which you can eat by itself, eat with honey as a dessert or snack or cover in taco fixings to make Navajo tacos!

Navajo tacos are an easy family dinner recipe that everyone loves. The Indian fry bread has a texture that is crispy on the outside and soft on the inside. It makes a different kind of base for tacos, which is much more delicious than regular taco shells or tortillas.

This Navajo fry bread recipe is easy to make traditionally according to our recipe below, but if you’re in a big hurry, you can make these even faster by rolling out Grands biscuits and frying according to the recipe instead of making your own dough from scratch.

How To Make The Indian Fry Bread

Besides being super tasty, this recipe is easy to make with ingredients you already have at home like all purpose flour, baking powder, salt, milk, and water. Don’t over-think it. The recipe is super simple. (Full recipe below)

First, you will mix the dry ingredients in a large mixing bowl. Then, stir in the water and the milk. If you do this all in one bowl, you will have fewer dishes to wash and who doesn’l’t like less dishwashing?

Once it is mixed, turn out onto a cutting board and knead several times to make a smooth dough. Again, don’t overthink it. This is an easy recipe.

Roll out the dough into approximately 5-inch circles. Make a small home in the center of each circle with your fingers. This will make them cook more evenly when you fry them.

Heat the oil in a skillet until it is about 375°. I like to use a digital laser thermometer like this one to double check the temperature. Once the oil is hot enough, fry each Indian fry bread circle, one at a time, until it puffs and bubbles. It should turn a light golden brown. Then using tongs, carefully turn it over and fry the other side.

Place a paper towel on a plate. As you remove each fry bread from the frying pan, place it on the paper towel to drain it while you fry the next one.

When you have finished frying them, you can serve them as a snack or make Indian tacos (Navajo tacos). If you serve them as a snack, you can top with things like honey, powdered sugar, cinnamon or your favorite flavor of jam or a combination of these.

My kids love to eat the Indian fry bread as a dessert or snack with honey. If there are any bubbles in the bread, they like to pour some honey inside the Navajo fry bread to make it extra sweet!

How to Make Indian Tacos

Once you make the Indian fry bread recipe, you can make fry bread tacos by topping with your favorite taco ingredients. You can really use any kind of toppings that sound good on Indian tacos. I am including a list of some of our favorite toppings here.

My husband and I like to make the Indian tacos recipe for ourselves more elaborate with a lot of different toppings. If you have picky eaters or small kids, you might want to keep it simple and include only a few things like ground beef, refried beans, or cheese. The beauty of this recipe is that it is very easy to make and it is easy to customize for each person’s tastes without causing you a lot of extra work.

Here are some toppings you might like to include when you make the Navajo tacos recipe:

  • Taco seasoned ground beef
  • Taco seasoned chicken
  • Pot roast or pulled pork
  • Black beans or pinto beans
  • Refried beans
  • Your preferred shredded cheese – Mexican blend, Cheddar, Asiago, etc.
  • Sour cream
  • Lettuce, green leaf, iceberg or romaine
  • Chopped tomatoes
  • Salsa – We prefer pico de Gallo salsa
  • Guacamole
  • Black olives
  • Cilantro
  • White onions, chopped
  • Green onions or red onions, chopped (especially on top to add to the color)
  • Anything else you can think of that might go well with tacos

In addition to the tacos, you can use the Indian fry bread to make other kinds of sandwiches and treats, so don’t be afraid to experiment! You can use the Navajo fry bread in place of bread, taco shells or tostadas.

Navajo Fry Bread Recipe – Quick and Easy Version

From: JO ANN G.

I was in a rush this evening, so I thought I would use Grand biscuits, instead of making the version of the Navajo tacos fry bread you included here. I just rolled out the Grands biscuits with a rolling pin, put a small hole in the middle and followed the rest of the recipe. My family loves it!

We also had fried apples for dessert, and I crushed up some homemade (plain)granola bars on it. It was YUMMY!

Slow Cooker Pot Roast Recipe – Quick, Easy And Delicious!

May 15, 2026 by 60 Comments

This slow cooker pot roast recipe is quick and easy to make and will satisfy everyone in your family! It’s also easy to use the leftovers for other quick meals!

This slow cooker pot roast recipe is one of our favorite easy dinner recipes for family meals because it is super easy to make and oh, so delicious! You will be amazed at how delicious it is with very little work!

This slow cooker pot roast recipe is so delicious and easy that it is one of the most popular recipes in volume 1 of our Dining On A Dime Cookbook! It is versatile and one slow cooked roast can be used to make several different meals to keep pleasing your family day after day!

This slow cooked pot roast is so delicious that everyone always raves about it! I cook it for my family any time I can get a good price on beef roast, but it’s also a great recipe to make when you want to impress guests! We have also made this slow cooked roast for holidays and special occasions.

This slow cooked roast recipe can be cooked in the oven or in a slow cooker. The secret to fall off the bone tender roast is in the slow cooking. I prefer to cook pot roast in the oven because I think it gives the roast a little bit better taste than the crockpot, but if you prefer a slow cooker, you will still end up with a tender and tasty roast.

I usually take a few minutes to prepare the beef roast the night before and let it cook slowly all night in the oven. By the next day, it is already starting to smell delicious, but I keep letting it slow cook until it’s time to serve for dinner.

Some people worry about leaving the oven on all night, but as long as there is nothing wrong with your oven, it should be fine, especially if it is an electric oven. I have cooked this slow cooker pot roast recipe in the oven for more than 25 years and have never had a problem.

Easy Serving Ideas

For an easy one pan meal, I sometimes add some potatoes, carrots and onions about 2 hours before the roast is finished and let them all cook together with the roast. This makes a great meal by itself, but if you want, you can also serve with a salad, fruit salad or fruit or veggies.

If I don’t have carrots and potatoes on hand, I will make some rice and serve the roast with rice and an easy vegetable. My family likes the fresh frozen broccoli or mixed vegetables so if I’m looking for an easy veggie, I will often microwave one of these just before serving.

We dump the rice ingredients in our rice cooker so it’s ready when the other food is done, but if you don’t have a rice cooker, you can easily make rice in a pan on the stovetop.

In the fall when I have lots of zucchini and other squash, I will also occasionally fry some squash and onions in a frying pan with margarine or oil and serve with the slow cooker pot roast. You can fry the squash in butter, but you have to watch it carefully because butter burns easily.

This slow cooker pot roast is super versatile. You can plan to make this pot roast and reserve the excess to make up to 4 dinners with 1 roast.

There are many delicious ways to use leftover roast! The pot roast leftovers are perfect for sandwiches and wraps. You can make delicious Mexican-style wraps by placing some roast on a flour tortilla with cheese, onions, lettuce and salsa.

For lots of great leftover pot roast recipes, be sure to check out the links to the other posts at the bottom of this post!

From Tawra’s Inbox:

Hello ladies,

I just want to say a BIG THANK YOU for your slow cooked pot roast recipe! It has been a joke in my family how truly BAD my roasts taste. My loved ones dutifully eat it because they see how hard I’ve worked on dinner ( plus they are nearly starved to death by the time dinner is served ) and they see the strained smile on my face as I bring their plates to the table. But even I can barely swallow the roast.

I always followed my “Better Homes and Gardens” cookbook faithfully and would try different cuts of meat, all to no avail; it still turned out so dry and tough.

Enter your help. I have been enjoying flitting about your website and finding all sorts of nuggets of advice. Then I found your slow cooker pot roast recipe! This was the answer I’ve been searching for, lo these many years! I had been cooking it all wrong. I thought I was doomed to buying the pre-cooked roasts-in-a-bag at my local grocery store.

Now my family smiles when they smell the slow cooked roast cooking as they come home from school. And I feel great knowing I have mastered one of the basic requirements of motherhood… cooking the perfect roast.

Thank you for all your great tips!

Sincerely, Becky H.

“Your slow cooker pot roast recipe calls for pouring soup and onion over roast and to cover tightly. What do you mean by cover tightly? Wrap it in tin foil?”

Thanks, Dennis

Yes, wrap in foil. I just put one or two pieces on the top of the pan and then “seal” the edges with my fingers.

Easy Stacked Enchiladas Recipe – The Easiest Way to Enjoy Enchiladas!

March 29, 2026 by 12 Comments

We absolutely love this easy stacked enchiladas recipe! It makes a quick and easy meal that’s great for families! Our entire family loves it, including the kids and I have often served it when I don’t feel like spending a lot of time in the kitchen!

If you love enchiladas but hate the hassle of rolling them, this Easy Stacked Enchiladas Recipe is for you! Perfect for busy weeknights or when you need a crowd-pleasing dish, these stacked enchiladas come together in no time.

Easy Enchiladas Recipe!

This stacked enchiladas recipe is different from a traditional enchilada recipe in that you don’t roll the enchiladas. Instead, you layer the toppings between 2 or more layers of filling and then add cheese and salad toppings on the top.

As written, the recipe serves 4, and includes 2 tortillas per stacked enchilada, but I often included an extra layer in the middle for my husband. My husband and the kids absolutely love this recipe. The kids love it with homemade tortilla chips and sopapillas!

I often cut tortillas into quarters and fry them in oil to make tortilla chips, especially when I have a pack of corn tortillas that is not quite as fresh and the tortillas are more brittle than flexible. These make great chips and give life to tortillas you might otherwise throw away.

This easy enchilada recipe is very flexible. I make it with these ingredients because everybody likes them, the recipe doesn’t cost a lot to make and it’s super easy. If you wanted to make it fancier, you could add a can of black beans or pinto beans to the mixture. If you prefer, you could leave out the beef.

You could also add black olives or chopped green onions to the top for a different kind of garnish. Or smother it in green chile if you prefer! Oh YUM! Really, any kind of Mexican food type modifications would probably be wonderful! If you make any modifications, tell us about them in the comments and how they turned out!

Easy Chicken and Dumplings Recipe – Tastes Like Grandma’s!

February 22, 2026 by 11 Comments

This chicken and dumplings recipe is an easy way to make chicken and dumplings like mom and grandma used to make! It’s a warm and savory comfort food, and a perfect meal for winter! This recipe is in volume 1 of our Dining On A Dime Cookbook!

This easy chicken and dumplings recipe makes this warm and savory comfort food like mom and grandma used to make! A perfect meal for winter!

There’s something timeless about a steaming bowl of chicken and dumplings! It’s simple, filling, and tastes like it came straight from Mom or Grandma’s kitchen. This easy chicken and dumplings recipe brings all that comfort to the table without a lot of fuss or expensive ingredients.

What makes this recipe so practical is how simple it is! With just a few pantry staples—chicken broth, cooked chicken or turkey, celery, carrots, and basic seasonings—you can have a hearty meal on the table fast. It’s a perfect way to use up leftover chicken or turkey, turning yesterday’s dinner into today’s warm and satisfying comfort food.

Here’s the process (Full Recipe Below):

Start by combining the broth, chicken, celery, carrots, bay leaf, and parsley in a Dutch oven. Bring everything to a gentle boil so the flavors can blend together. While that’s simmering, stir up the dumplings. The baking mix keeps things easy and dependable. Just add thyme, parsley, and milk, stirring until the dough is just moistened. Be careful not to overmix—this helps keep the dumplings light and tender.

Drop spoonfuls of dough straight into the boiling broth. Let them cook uncovered for 10 minutes, then cover the pot and cook another 10 minutes. And here’s the key: don’t peek! Lifting the lid releases steam and can leave you with soggy dumplings instead of fluffy ones.

When they’re done, remove the dumplings with a slotted spoon, discard the bay leaf, and ladle the rich broth and vegetables over the top. In about 30 minutes, you’ll have a comforting, homemade meal that tastes like it took all day—simple, budget-friendly, and absolutely delicious.

Easy Chicken Fried Steak Recipe – Ready in Under 30 Minutes!

February 16, 2026 by 42 Comments

This Chicken Fried Steak recipe is quick and easy and so delicious that your family is sure to love it! Save on your food bill with this inexpensive recipe, which costs dramatically less than the restaurant version!

This chicken fried steak recipe is quick and easy to make at home and tastes just as good as at a restaurant! Your family is sure to love it!

Chicken fried steak is a tasty traditional Southern comfort food that can’t be beat, but it can be very expensive to buy at a steak house! This chicken fried steak recipe is super easy and delicious. Because it uses ground beef, it is much more fork-tender than restaurant chicken fried steak, but it has all of the delicious flavor!

I always make my chicken fried steak recipe with white gravy and we have included an easy white gravy recipe. If possible, it is best to use some of the drippings, or leftover grease, from the beef to make the gravy. If you want to add a slightly different but delicious twist, you can use bacon grease for some or all of the gravy drippings.

Chicken fried steak is traditionally served with potatoes, like mashed potatoes topped with the same white gravy or baked potatoes. Rolling the baked potatoes in coarse salt before baking them gives them a more restaurant-like flavor.

It is also often served with a vegetable like fried okra, corn on the cob, broccoli or a salad. Coleslaw and potato salad are also great choices. Some people like to include a bread, like cornbread or Texas Roadhouse Rolls.

My husband Mike has eaten a lot of chicken fried steak in his life and he absolutely loves this recipe! Whenever there’s a special occasion like his birthday or Father’s day, he requests this as part of the meal. Try it and see how it satisfies the chicken fried steak lover in your family!
