delicious pear fruit compote recipe

This time of year it is still cold enough to enjoy what I call a nice “winter” fruit recipe.

Tasty Pear Fruit Compote Recipe

1/4 cup brown sugar, packed
1 tsp. cornstarch
1/4 cup water
1/4 cup concentrated orange juice
2 Tbsp. margarine
1 can (20 oz.) pineapple chunks, drained
1 can (15 1/4 oz.) pear halves, drained
1 can (15 oz.) Mandarin oranges, drained

Topping:

1 (3 oz.) pkg. cream cheese, softened
1 Tbsp. sugar
1 Tbsp. concentrated orange juice

In a large sauce pan, combine the first 5 ingredients in order. Bring to a boil and cook for 2 minutes until thickened. Add fruit, turn down heat and just heat through. In a small bowl, beat topping ingredients until smooth. Serve fruit with a dollop of topping.
