    Am I supposed to chop the cauliflower or leave it whole? Thanks So Much.

      Gabriella you are suppose to leave it whole that is why the cooking time is 8-9 mins. but to be honest if I am in a hurry or if you don’t have a bowl big enough to put it in you can break it into chunks and just cut back on the cooking time. I microwave it for 3 mins., check to see if they are tender and do it for another 1-2 mins until if finally is tender.

    What about mashing it like potatoes…thinking my grandkids might like it. Is it a strong flavor or does the cheese make it palitable for little ones?

      I like to start the kids getting used to cauliflower by mashing it 1/2 and 1/2 with potatoes and then adding great flavors such as in this recipe. It helps to cut the taste down just enough that the kids don’t object to eating something new.

    Preheat oven at 375.
    When I make Cheesy Cauliflower, I trim the whole cauliflower on the bottom and make a couple of slits in the core and parboil in water with a little added salt for about 15 minutes. I transfer the cauliflower to a pie pan and coat it with a mixture of 1/2 cup mayo along with 2 tsps of mustard and sprinkle cheddar cheese on top (1/2 cup). Bake for 10 to 12 minutes or until cheese is melted. Yum, Yum.

    This has been one of my fav vegetable side dishes since your Not Just Beans days! It’s easy, tasty and I always have the ingredients on hand. It also works well as a main dish for vegetarian family members.
