This Watermelon Pork Tacos recipe is amazingly delicious! Our friend Jason over at the BigBear Homestead kept telling us his taco recipe was fantastic, so we decided to give it a try and he's right! Try it for yourself and you won't be disappointed!

So our friend Jason over at BigBear Homestead has been raving and raving about his Watermelon Pork Tacos recipe and how amazingly delicious they are so we decided to give it a try and he’s right! They are delicious! And those of you who have seen his comments on YouTube know that Bigbear is a major taco connoisseur!

Watermelon Pork Tacos Recipe

Pork Ingredients:

1 pork tenderloin, cut into 1 inch thick slices
1 Tbsp. onion powder
1 tsp. red chili flakes
1 tsp. black pepper
2 Tbsp. minced garlic
3 Tbsp. soy sauce
2 Tbsp. oyster sauce
1/2 tsp. sesame oil

Vinaigrette:

2 Tbsp. rice vinegar
1/4 cup olive oil
1 1/2 Tbsp. soy sauce
1/4 tsp. sesame oil

Salsa:

1 cup watermelon (cut into 1/4 inch cubes)
1 cup seeded English cucumber (cut into 1/4 inch cubes)
1 Hass avocado (pitted, peeled, cut into 1/4 inch cubes)

Lettuce (to be used as “taco shells”):

1 romaine lettuce head

How To Make The Watermelon Pork Tacos:

 To prepare the pork, combine all of the pork ingredients in a Ziploc bag and marinate for 30 minutes.

While the pork is marinating, whisk together all the vinaigrette ingredients.

In a medium bowl, combine all the ingredients for the salsa. Very gently fold in the vinaigrette. Chill.

Trim off the soft dark green end of the romaine. Cut off the root end and separate the leaves to create 4-inch-long lettuce “shells”. Rinse, dry, and chill the leaves.

Preheat a grill to medium (or a broiler to 450 F). Discard the marinade. Grill the pork for 3 minutes on each side. Remove from the heat. Let rest 3 minutes and roughly chop into 1/2 inch cubes.

Fill the lettuce shells with the pork, top with the salsa, and enjoy!
