Sunshine Salad – A Delicious Jello and Fruit Salad

Sunshine Salad

Jello is always a favorite, whether you serve it in pretty long stem glasses, a beautiful mold or just a plain paper cup at a picnic.

This is a great recipe to keep for those hot summer days and it goes well with spicy things like barbecue.

1 pkg. (3 oz.) lemon Jello
1 cup boiling water
1 can (8 oz.) crushed pineapple
1/3 cup orange juice concentrate
1 can (11 oz.) mandarin oranges

Dissolve Jello in boiling water. Drain pineapple, reserving juice. Set pineapple aside. Add enough water to reserved juice to make 1 cup and stir into Jello. Add orange juice. Chill until partially set. Then add pineapple and oranges.

    i will have to make this for my hubby … he LOVES jello! … this sounds soooo yummy…
    i normally make him sugar free jello and add the no sugar added fruit cocktail (he is diabetic)… but i will make this for him… i know he will enjoy it …

    this was a comfort food when I was a child. Made during cold season.
    After it was found I was alergic to it I stopped making it.
    But boy did this bring back yummy memories.

    I love jello salads! They are a great summer dessert and I often get store brand gelatin on sale, so it is an economical dish to bring to a gathering as well. One of my favorite jello salads is made with chopped apples in pineapple jello topped with a mixture of Cool Whip and crushed walnuts. Do simple but sooo good ๐Ÿ™‚

    I have made this salad for years but I substitute shredded carrot (about 1 cup) for the mandarin oranges. I don’t use orange juice concentrate..just 3/4cup of cold water. It sets up very well and adds a vegetable to the salad.

      That is the way my Granny used to make her Jello salad. She would put the hot water and the jello in a bowl and let me mix it with a hand crank egg beater while she shredded the carrots. Lots of fun for a 4 year old.

    Can’t believe my old favorite wasn’t mentioned: Green Goop!!!!! 1 small package of
    pistachio instant pudding mixed with about two cups of crushed pineapple. Do not drain
    Pineapple–use juice pack or heavy syrup kind. Fold in a medium size kool whip.
    You can throw in some coconut or chopped nuts. Sometimes I add a can (with juice) of
    Fruit cocktail. My kids always loved this. Great and FAST for putlucks. Tommie
