Roast with Cranberry Sauce and Leftovers

I loved your recipe for the cranberry roast (see below). It was awesome. The next day, I heated the leftover roast and gravy added about a tablespoon of soy sauce and 1/2 a bag of broccoli florets. I served that over ramen noodles and it made a wonderful broccoli beef type dish.

A lot cheaper than take out!

Cranberry Roast

1 pkg. dry onion soup mix
1 (3lb) roast
1 can (16 oz) cranberry sauce

Pour soup mix in a crockpot. Add roast and top with cranberry sauce. Cover and cook for 8 hours. To thicken gravy, mix 1 Tbsp. cornstarch and water and add to gravy. You can add carrots and potatoes 4 hours into cooking.

    This was too delicious.

    Thanks for the new idea and the broccoli beef idea as well. Now that i cooking for 2 or 3 a roast can go on forever.

    this sounds delish! .. and we love cranberry sauce too .. thanks for sharing ..
    also .. not sure where i asked this .. and well sorry to ask it again ..
    but will u be giving away the kids pack (savings with kids, i think its called) too for half off? .. just curious .. 😀

      Sorry Rose you asked yesterday and I haven’t gotten a chance to ask Tawra yet if we are. She is the one deciding on the give aways. I’m not super positive but I think we probably will eventually. I’m not sure we know exactly when yet though.

    k jill .. thanks for answering .. hope all is ok with everyone ..
    i will have to try that c k .. i bet this is good too .. 😀 ..
    i normally take those meatballs already made in the freezer section and add a can of the cranberry sauce and cook in crockpot .. and its really yummy …
    my daughter does hers with grape jelly but i think its a bit more sweeter ..

    I have used this on chicken breast and pork roast. I mix a can of whole berry sauce with some french dressing or bbq sauce and pour over all. After cooking,serve with mashed potatoes, rice or couscous. Yummy!

    I feel dumb asking this, but it sounds so good that I’d like to try it, and I do have a small pork roast….so do you mix the onion soup mix w/water first or do you put it in dry? Also, I don’t have a crock pot, I have a cast iron dutch oven . I like sweet potatoes and peas w/pork roast. Yum, this sounds goooood! Thanks! 🙂

      In most recipes (this one included) if it calls for onion soup mix you are just using it for seasoning so you sprinkle it on dry unless the recipe says different. Yum sweet potatoes and peas does sound good w/pork roast.

    Yum !! What a great idea…I like whole cranberry sauce with roast pork BUT never thought about using onion soup mix and a crockpot. Will try it next the next roast I buy.

    Nancy, except when making cake or souffle’s which must be done as directed, cooking is pretty much just mixing things together and heating them. Whether you mixed the onion soup with the cranberries or just sprinkle it on, it comes out great after cooking it.

    I found quite by accident this sweet treat. I took a can of cranberry sauce and cubed it and popped it in the food drier. I dried it undil it was like jelly beans. Actually I was going to prepare it for another purpose, but now it is a sweet treat. I put it in a container for later! Why not, there is dried fruits of every kind, why not cranberry?
