Here is an easy potato latkes recipe you can make at home if you’d like to know how to make latkes! Latkes are a traditional Jewish dish often served at Hanukkah. They are a tasty form of a potato pancake. Latkes are generally crunchier texture than a typical potato pancake, which is why so many people love them, because the potatoes are grated in larger shreds and they’re usually cooked a little longer.

Potato Latkes Recipe

2 large Russet potatoes
1 large onion
2 eggs
1/2 cup all-purpose flour
2 tsp. course kosher salt (or 1 teaspoon fine sea salt), plus more for sprinkling
1 tsp. baking powder
1/2 tsp.black pepper
oil, for frying

Grate the potatoes and onion. Transfer the mixture to a clean dish towel and squeeze and wring out as much of the liquid as possible.

Transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.

Place the oil in the pan and heat. Once the oil is hot, a drop of batter placed in the pan should sizzle. Use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs.

After about 5 minutes, when the edges of the latkes are brown and crispy, flip. Cook until the second side is deeply browned, about another 5 minutes.

Transfer the latkes to a paper towel lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

Potato Latkes Tips

  • Potato latkes are traditionally served with sour cream and/or applesauce.
  • Latkes are usually cooked thicker than potato pancakes, but you can cool to your desired thickness. They are also more crunchy and coarse and brown, part of the delightful crunchiness latkes are known for!

    Use matzo Meal instead of flour and baking soda, so delicious so fluffy the best you ever ever had. Grammy said so

    I’ve been trying different latke recipes for years trying to mimic my father-in-law’s recipe, which which to me and his son, were the best. He didn’t cook much but his latkes were the spot on. I HAVE TO LOOK NO FURTHER. I HAVE FOUND THE RECIPE THAT TASTES JUST LIKE HIS!! These were on spot. These were the bomb! Perfect in every way. I used Avocado Oil and gluten free 1:1 all purpose flour. Amazing!

    This is a wonderful recipe. It is a good start to making a Latka recipe your own. I grate one zucchini and one carrot and add to my grated potato and onions. It’s a delicious addition and the kids will get some veggies that they won’t even notice.
