Peppermint Marshmallow Meringues

Are you having nightmares about what to do with those 101 candy canes you are getting from everywhere? Here is a great recipe to use them in. It’s a little different, but you’ll like it!

These delightful snacks are great to give as gifts or to serve with a cup of hot cocoa. Take your gift one step further by filling a basket with a bag of these Peppermint Twist Marshmallows, a mug, some hot chocolate mix and a candy cane for a stir stick.

Peppermint Twist Marshmallows Recipe

1 cup powdered sugar
3-4 tsp. water
Marshmallows
Peppermint candy canes or candies, crushed

Mix sugar and water to the consistency of a thin glaze. Dip half of the marshmallow into glaze. Shake slightly to remove excess, then roll in crushed candy. Place on wax paper with coated side up. You may serve this on a skewer in hot chocolate or al by itself.

Don’t be afraid of meringues. They are so easy. Just be sure your utensils and bowl are grease free. This recipe has long instructions but the Peppermint Meringues are really very easy to make.

Peppermint Meringues Recipe

2 egg whites
1/8 tsp salt
1/8 tsp cream of tarter
1/2 cup sugar
2 peppermint candy sticks, crushed

Beat egg whites until foamy. Sprinkle with salt and cream of tarter then beat to soft peaks. Gradually add sugar beating to stiff peaks ( about 7 minutes). Drop by spoonfuls on to ungreased foil or paper lined baking pans. Sprinkle with crushed candy canes. Bake at 225 degrees for 1 1/2 hours. Turn off heat and leave cookies in oven with door ajar for 1 hour or until cool. Store in an airtight container.

    I really like those Peppermint Twist Marshmallows. Will have to make. I just bought some dark chocolate hot chocolate, so these will go great with a cup.

    could you use less sugar than called for or would that make the meringes sort of soft.
    I like the idea and would like to give it as gifts to my grandchildren and still have the parents like me (no sugar rush)

      You could maybe try it and see. Usually when I make a regular meringue they are pretty stiff before I put the sugar in so I don’t think it should bother too much if you cut back a little.

    I made the marshmallows and they came out great! They would look real pretty and festive on top of a white cake and are great in hot chocolate.

    Could you mix the crushed peppermint candy canes into the meringue and then pipe? Or would the crushed candies deflate the meringues too much?

      Debbie I am not sure if they would or not. Maybe someone else could tell you. You could try one or two with the candy in it and see what happens.

    You could also dip the marshmellows in chocolate and then in peppermint dust-bits.

    Peppermint bark is pretty this time of year also. just melt the white chocolate and throw in the peppermint crushed candy. spread on waxed paper on cookie sheet, and break up when hard. It looks pretty in a little cellophane bag with a bow.
