I was reading an Amish book and it had some recipes along with the stories, and there was one I really thought you’d like Jill and Tawra. It is a very simple recipe for Whoopie Pies. You take a boxed cake mix and add ingredients as stated on box, PLUS an additional cup of flour, and mix. Drop by spoonfuls onto baking sheet. Bake 10-12 minutes. When cooled spread any flavor of canned frosting between 2 of the cookies. Real simple. You can use any flavor of cake mix and frosting.
My husband is from PA, his grandmother is in Lancaster County. It’s not Christmas if we don’t have Whoopie Pies. His mother makes them ahead of time and freezes them. They freeze well, but will stick a little to your fingers, which is fine with him, more for later ๐
Am I missing something here? My dough is chilling but I just looked at the recipe and it says it makes 7 dozen. Either I am missing something or this is a loaves and fishes story as I don’t understand how a recipe with 2 cups of flour will make 84 filled cookies. Maybe they are made really really tiny?
Can you use butter instead of the margarine, as margarine is so unhealthy. We only use butter and these sound easy and delicious! Thank you and Happy St Patrick’s Day!!!
You could maybe use butter. What happens in some cookie recipes it that if you substitute butter for margarine or solid shortening the cookies melt, spread too much and don’t keep their shape as well. I will sometimes use half and half.
These look yummy! Do you think this cookie would work well with an ice cream filling for ice cream sandwiches?

The filling says to cream butter and sugar but I don’t see butter in the ingredient list, am I missing something here?
Sorry PJ, my mistake. I meant to cream the margarine and said butter instead. I fixed it. Thanks for letting us know.

Nope you are right. It was a typo. Sorry!! I can’t remember for sure but I think it was 2 dozen. Thanks for pointing it out!
