Leftover Meat Tips

  • Cut leftover meatloaf or roast beef into chunks and add them to spaghetti sauce to make speedy spaghetti and meatballs.
  • Spicy Hash- Dice leftover roast beef, roasted potatoes, carrots and onions. Add bread crumbs until the consistency is such that you can shape into cakes. Cook over medium heat in a greased skillet until pancakes are light brown and heated through.
  • Grind leftover roast beef, stew meat, and other meat in your food processor. Add to scrambled eggs along with cubed leftover potatoes for an easy and hearty breakfast.
  • Spread leftover Sloppy Joe meat in a casserole dish (hamburger with barbecue sauce can also be used). Place sliced American cheese or cheddar cheese over the meat and top the cheese with homemade or refrigerator biscuits. Bake at 350° until the biscuits are done.
  • Meatloaf Saute – Place 1 large sliced onion in a frying pan. Cut meatloaf into bite sized pieces. In the frying pan, add meatloaf, one 8-ounce can of tomato sauce and a can of peas or mixed vegetables. Heat through.
  • Chili Pie – Pour 4 cups extra chili in a deep pie or casserole dish. (Add one can corn or other mixed vegetables if you have a little less than 4 cups.) Prepare 1 recipe cornbread according to directions. Drip batter over chili. Bake at 375° for 30 minutes or until the cornbread is done. Sprinkle with shredded cheddar cheese if desired.

    I added leftover meatloaf cut in bites to macaroni and cheese the other night. It gave it so much more flavor than plain hamburger! It also added much more nutrition with the veggies, tomato sauce, egg and milk I used in the meatloaf. I will definitely do this again~it was almost gourmet:)!!

    Stir fry made with leftover roast cut into strips really stretched the leftover meat, and can work wonders with meat that has gotten a little dry.

    Whenever we have some steak (any kind) left over, I cut it into tiny cubes at the end of dinner and put it in the fridge. the next morning I lightly saute these little cubes and pour in eggs and make scrambled eggs. basically it is a breakfast of steak and eggs. You can eat it that way, or put some in a tortilla and roll it up. that’s what we do, steak and eggs in a tortilla and it is yummy. Works every time.

      Oh yum, Karri. Good recipe. This would be good some night for dinner too I imagine. It got me to thinking if you needed to this is the perfect example to of how to stretch your meat – use small pieces of cubed meat and serve with something instead of a large piece served for each person.

    I put leftover well done roast beef thru my food processor until
    well ground. Then add Marzetti’s cole slaw dressing. Makes great sandwich spread. Also works well with ham.

    Hi,
    What we do in Sweden is the following

    Cut meat into small cubes. Cut some leftover cooked potatoes, or raw ones intoequally small cubes. Dice some onion. In a skillet, fry onions and potatoes until golden. Make sure raw potatoes are done. Add cubed meat and fry some more. You don’t need very much butter. Addsalt and pepper to taste. I like parsley, finely chopped. Pickled beetroot goes well with this. If the meat is a bit sparse, fry an egg per person, place on top of “pytt I panna”, sunny side up. Yum! I’m sure you do something similar in the states, but I don’t know what it is called.

    As a teenager, my foster mom would make sandwiches the next day from cold sliced meatloaf, on homemade bread, with the condiment of your choice. Leftover meat loaf was left in a loaf form until it was ready to be made into sandwiches. This is especially good on hot days when the meatloaf is super cold. Works best with meatloaf that is lean, or well-drained when cooked, and made with onions or garlic.

    Slice and fry meatloaf. Put on toasted bread with ketchup. Or skip frying and put on toast with ketchup for lunch boxes. As a single I make mini meatloaves on my George Foreman grill so the fat drips off. Then I freeze them in bags and nuke as desired for meat loaf sandwiches.
    Love meatloaf.
