No Bake Fudge Cookies Recipe

1/2 cup milk
2 cups sugar
1/2 cup baking cocoa
1/2 cup margarine
1/2 cup peanut butter
1 tsp. vanilla
3 cups oatmeal
1/2 cup nuts (optional)

Before you start, cut about a 20 inch piece of wax paper. Lay it on the counter. This serves as something to drop the cookies on.

In a saucepan, mix milk, sugar, cocoa, and margarine. Bring to a boil and boil 1 minute. Remove from heat. Stir in peanut butter, vanilla, nuts. Mix until peanut butter is mixed in. Add oatmeal. Drop by spoonfuls on the wax paper.

This must be done a little quickly because the cookies start hardening pretty fast. If the humidity is high or you don’t boil them the right amount of time, they may not harden. Don’t panic! Just pour it into a container and use as fudge sauce for ice cream. …Although my kids love eating these homemade no bake fudge cookies with spoons if they don’t get hard enough to eat as cookies!

No-Bake Energy Bites Recipe

1 cup (dry) oatmeal, any kind
1 cup toasted coconut flakes
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla

Mix all ingredients well. Chill for 30 minutes. Roll into balls about 1 inch in diameter or whatever size you prefer. Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25  balls.

Spread peanut butter on a cracker and top with a second cracker. Melt the almond bark in the microwave and then dip crackers in the melted almond bark. Lay on wax paper. Gluten Free, Sugar Free Peanut Butter Dough Cookies

1/4 cup peanut butter
1/4 cup plus 3 Tbsp. raisins
Salt to taste (1/8- 1/4 tsp.)
2 Tbsp. roasted, unsalted peanuts (If you can only find salted, reduce or omit added salt.)
1/8 tsp. vanilla

Throw everything into your food processor  and combine until very smooth. Roll into balls, cookies, bars or just eat it by the spoonful.

Dough can be stored on the counter, in the fridge, or in the freezer.

1- 8 oz pkg. cream cheese
1/3 cup sugar
2 Tbsp. lemon juice
1- 8 oz. container whipped topping

Beat first 3 ingredients together. Fold in whipped topping. Spoon into a graham cracker crust and chill.

Easy No Bake Peanut Butter Snacks

1/4-1/2 cup honey or corn syrup (to taste)
1 cup dry milk
1/2 cup peanut butter

Combine all the ingredients and roll into 1-inch balls. These can then be rolled in coconut, sunflower seeds, granola or nuts. Store in an airtight container. Makes 1 dozen.

Homemade Frozen Bananas

bananas
skewers (optional)

Cut the bananas in half crosswise. Insert a skewer in the thicker end. Place the bananas on a tray and place in the freezer. When frozen, move to a plastic bag and keep frozen until ready to use.

Toppings

yogurt nuts, finely chopped
peanut butter applesauce
melted chocolate coconut
wheat germ

Allow the bananas to thaw slightly. Put the toppings in small bowls. Dip the banana before each bite. Eat plain or roll or dip into any of the toppings. Use the wet topping first so the others will stick.

    Wondering if you think Nutella would be an okay replacement for peanut butter. Frustrating that most of these recipes have peanut butter 🙁

      Probably wouldn’t hurt. Use any nut butter you want.

      My daughter in law just leaves the peanut butter out of things like the no bake fudge cookies and you can tell no difference really.

    Would love it if you would include nutritional information with your wonderful recipes. I have Type 2 Diabetes and that would be a great help to me.

      Ronnie. I have Type 1. If you buy the ingredients, use each one of those individually. Make sure you add them up PER SERVING SIZE! For example,if the recipe calls for 6 tbsp of chocolate chips, and each one is 10 carbs, write that down as 60 carbs. Do that for each ingredient. Add all of those up. Once you are done, divide that number by the total number of servings you made. You should be good. I hope that helps.

        You know this is something I have always wanted to mention and never have. People often hear me say I put a cup of sugar in a recipe and they freak out because they hear a cup of sugar and make it sound like they are getting a cup of sugar with each serving but if they would take the time to think about it and divide it up by servings often they are getting only about 1-2 teaspoons of sugar for a serving – sometimes less than what these same people will dump into their tea or coffee without thinking. I do know diabetics fall into another category but often we react to things instead of taking time to figure things out like you have mentioned to do

    I am so glad that I am not the only one who finds baking cookies tedious. It’s a running joke in my family that I’d rather bake a pie or cake from scratch any day than bake cookies. Ha! I will bake cookies, but I transform every recipe (just about) into bar cookies. My oldest son hangs out with a group of kids that they call the moms “mom”, I am set apart by being called “bar cookie mamma”.

    Living in Hawaii is cheaper to buy or build on the mainland if you can find enough food that’s not expensive.

    Just wanted to say thanks for this recipe. I enjoy the firecracker chicken and having just attempted this for the first time, I have to say it tastes 99% the same! Would have never been able to figure out how to make it myself!
