Easy Meal – Fried Ham Slices And Double Crunch Apple Salad

Menu:

Fried Ham Slices
Baked Potatoes
Double Crunch Apple Salad*
Peas
Cherry Delight Cake*

 

Recipes:

Double Crunch Apple Salad Recipe

1 large golden or green apple, cut into bite sized pieces
1 large red apple, cut into bite sized pieces
1 tsp. lemon juice
1 can (20 oz.) pineapple chunks, drained
1 cup miniature marshmallows
2/3 cup flaked coconut
1/2 cup nuts
1 small container of cool whip

Toss apples with lemon juice and add the rest of the ingredients. If you don’t have any cool whip or want a more savory salad, replace the cool whip with 1/4 cup mayo and 2 tablespoons each of celery and raisins.

This recipe makes a great Christmas cake. You might also try it with other flavors of pie filling and gelatin. Peach, blueberry or lemon make great variations.

 

Cherry Delight Cake

1 pkg. white cake mix
1 pkg. (3 oz.) cherry gelatin
1 1/2 cups boiling water
1 pkg. (8 oz.) cream cheese, softened
2 cups whipped topping
1 can cherry pie filling

Bake cake in a 9×13 pan according to directions on box. Let cool. Dissolve gelatin in boiling water. Poke holes in cake with toothpick or fork and gently pour gelatin over it. Cool for 15 minutes. Cover and refrigerate for 30 minutes. In bowl, beat cream cheese and fold in whipped topping. Carefully spread on cake. Top with pie filling and chill for 2 hours.

      You can buy packages of thick sliced ham at the grocery store but to save I usually just use a large ham and slice thick slices. I put some oil in a pan (I use a little bacon grease) and fry the ham on each side until it is brown. It only takes about a minute or two minutes just until it is a nice rich brown. Years ago people use to make gravy from the drippings. I didn’t personally like ham gravy to much and now there is so little fat in most hams it is hard to get enough drippings to do that.

        Using bacon grease is not Hearth Healthy at all.. You can use canola oil or vegetable oil or to make it even more healthier, just bake it. It will still be very yummy!!

          Beg to differ with you Sandy. That was true many years ago but the latest findings are that bacon grease is not only good for you but much better in the fact that it has certain nutrients that canola oil and veggie oil don’t have. You need to use moderate amounts of all of these types of oils even oils like coconut oil you need to be careful of because it is higher in calories than some other oils like olive oil but because we believe it is so healthy we inhale it and use it more than we should then wonder why in the world we are gaining weight while we are eating such a healthy diet. The healthiest diet in the world for a normal person is moderation in everything.

    Thanks for the recipe Jill. I never heard of fried ham slices, but think it’s a great idea, and easy too. I can’t wait to try it.
