Ingredients

½ cup shortening
1½ cups sugar
2 eggs, beaten
½ tsp. salt
1 tsp. cinnamon
½ tsp. cloves
2½ cups all purpose flour
1½ cups applesauce
1 tsp. baking soda in 2 Tbsp. hot water
1 cup raisins
½ cup nuts (optional)

Instructions

  1. Preheat oven to 350°.
  2. Cream together the shortening and sugar until fluffy.
  3. Add eggs, salt, cinnamon and cloves. Mix well.
  4. Add flour and applesauce alternately.
  5. Dissolve baking soda in hot water.
  6. Pour into the shortening mixture. Stir.
  7. Fold in raisins and nuts.
  8. Bake in a well greased loaf pan for 1 hour.
  9. If desired, frost with Buttercream Frosting.

Notes

  • Instead of the Buttercream Frosting, you could enjoy a slice with a dollop of whipped cream or a scoop of vanilla ice cream.
