Menu – Fish Fillet and Grilled Corn

Delicious corn on the cob

Tips:

  • To keep French bread from going stale, slice it, place it back in the wrapper and freeze. Take out just the amount you need when you’re ready to use it. I especially like doing this because the frozen French bread is much easier to butter before placing in foil to warm in the oven.
  • Add vanilla pudding to any cake mix (or chocolate pudding to chocolate cake mix) for a more homemade tasting cake.
  • To stretch canned frosting, add a package of softened cream cheese. You can also add cream cheese to cut the sweetness of any frosting.

French Bread
Bacon Wrapped Corn*
Easy Macaroons*

 

Recipes:

Fillet Bundles

4 (6 oz. each) fresh or frozen fish fillets, thawed
Parmesan cheese, grated
Cayenne pepper
2 medium zucchini, cut into 1/4 inch slices
1 small sweet red pepper, julienned
Salt

Place fish on heavy foil and sprinkle with Parmesan cheese and cayenne pepper. Top with zucchini and pepper. Salt to taste. Seal up in foil. Grill covered over indirect heat for about 8-10 minutes until fish is flaky.

 

Bacon Wrapped Corn

Large ears of corn, husks removed
Bacon
Chili Powder

Wrap each ear of corn with bacon and sprinkle with chili powder. Wrap well in heavy foil. Grill uncovered for 20 minutes over medium heat until corn is tender and bacon is cooked. Turn once.

Easy Macaroons*

1 pint pineapple or orange sherbet, softened
2 tsp. almond extract
1 package (18 1/3 oz.) white cake mix
6 cups flaked coconut

Mix sherbet, almond extract and cake mix well. Stir in coconut. Drop by tablespoonfuls 2 inches apart onto a greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until edges are slightly brown. Makes about 6 dozen.

    I have one question, where do you get free sod? We have places here where we can get free mulch, but free sod.

      Carol so far Tawra has found it at a couple of different places. In the area she lives they are building new houses right and left so when they lay sod at a new house she goes over there in the morning and asks if she can leave her pick up there and have them throw the stuff they are tossing in it instead of the dumpster. She was going and trying to get it out of the dumpster so this is much easier.

      Then in the spring there were a lot of people on craigslist back there who would lay sod and have extra left. They didn’t want to have to haul it off so would advertise for people to have it for free if they would haul it off.

      The one place my folks get some from is there is a sod farm real close to where they live and they go there and get a few scraps from them once in awhile.
      It all takes time to get it this way but it is free.

    I love that fish recipe idea and I just bought some zucchini from the Farmers Market, so that recipe comes in handy, and the Easy Macaroons looks good too.

    CHEAPSKATE FROZEN LUNCH: I take two soft taco rounds and spread a ground-beef Mexican mixture of some sort thinly on top of one taco round. I top with shredded cheese and then top with the other taco round making a taco-like sandwich. I cut this into fourths and put each fourth onto a small clean, used aluminum pie plate. I put the pie plate into a clean bread wrapper and tie. Then I put the four plates on top of each other in the freezer. It doesn’t take up much space. I take out one for lunch and put it in my gas oven for about 15 minutes. Could put in microwave on serving plate. After it is hot, I put the taco on a serving plate with shredded lettuce and minced onion. Could put salsa on top.
