Easy Shortbread Cookie Recipe
This easy shortbread cookie recipe is a simple recipe to make classic shortbread cookies like grandma’s homemade shortbread! They’re perfect for snacks, or for tea or coffee with guests!
- Yield: 9 pieces
Ingredients
1/2 cup butter, softened
1/4 cup plus 1 Tbsp, sugar
1 cup plus 1 Tbsp. all-purpose flour (do not use self-rising flour)
Instructions
- Preheat oven to 375°.
- Whip the butter until it is light and fluffy.
- Add sugar and flour.
- Beat more until it is light and fluffy.
- Pat the dough 1/2 inch thick into a 9×9 inch pan.
- Prick with a fork and sprinkle a little sugar on top.
- Bake for 15-20 minutes until it is light brown.
- Cool before serving. Makes 9 pieces.
Notes
These shortbread cookies are delicious just as they are, but if you’d like to make them even better, you can add strawberries and cream or other berries or sliced fruit to make a cool snack or dessert!
